Edamame Salad with Arugula and Radishes

This one required no actual cooking, just thawing the edamame, chopping/slicing things, and mixing them together. The flavors were lovely and it was a nice, simple dish after the previous night’s endeavor. Kids weren’t huge fans of it but did better with it than I expected. It was hard to get everything evenly distributed throughout the salad but that’s probably because I doubled the recipe.

Molasses Spice Lemon Sandwich Cookies

Servings: about 40 cookies

There was a lot of chilling/cooling involved in this process, but very little that you actually need to be present for, and they were absolutely amazing. Nice and crispy on the first day. They soften up after that, but are still delicious. I want to eat all of them all the time.
