I am super full and it has been an hour and a half since I finished eating – but I also ate a bunch of Takis before starting dinner because I make bad life decisions. This was decently hearty even though it was in the lunch chapter, and it was super easy to make (boil and drain farro, let farro cool, process all the ingredients for the pesto, cut up artichokes and tomatoes, mix everything together). Most importantly, though, this is a pesto that does not have pine nuts. We’ve been kind of obsessed with sunflower seeds as a snack food in this house anyway, so a sunflower seed pesto that was still a basil pesto was an excellent choice for the pine nut allergies in the house (sending away pesto in Italy because I had an allergy was the saddest thing).
Overall, the adults were happy even if I could have gone with a smaller portion. The kids weren’t super happy, though the less picky one was pleasantly surprised by the farro itself and the picky one ate it faster than I anticipated.
