Falafel Burgers with Yogurt-Tahini Sauce

Total time: 1.5 hours (I think), plus soaking the chickpeas for 8 hours

I. Love. These. This was totally my excuse to make falafel again while counting it as a new recipe, but oh my goodness it’s a different beast while still being amazing.

The process was pretty easy: Throw most of the ingredients in a food processor to combine them/break them down, make a magical flour paste in the microwave and mix that in, shape the mixture into patties, and fry up the patties. The quick pickled red onions were super easy, the yogurt sauce was super straightforward, and everything was delicious. I’m seriously craving these as I write and am super sad that they’re all gone. They were very filling, too. It’s not uncommon for one or more of us to eat a second burger of any variety, but we were all happy with our first in this case.
