Homemade Crackers

Every year, Costco does lots of cheese samplings around the holidays. Every year, I get just enough Cranberry Cinnamon Goat Cheese to be satisfied. This year, however, Costco is not doing samples (in spite of setting up little carts with products and people talking about the products that just remind you that you can’t have the samples that make going to Costco just a bit more joyful), which means I didn’t get the cheese. However, they did have the cheese on sale, so I picked it up and decided we could have it for Christmas. A few days before Christmas, however, I realized we didn’t have a means for eating the cheese. We have a few types of crackers, but none of them would have worked. I had already done my grocery shopping for the week and didn’t want to go back out to buy crackers, so I decided to make them myself. This was the first recipe I found, and it seemed quick and easy so I decided to go for it.

It was quick and easy. They turned out breadier than I probably would have liked, but I also probably could have rolled them out thinner so that they would have been more cracker like. They worked perfectly well with the cheese, which ended up being our Christmas lunch (alongside some fruit) because none of us cared enough to eat a full lunch that day.
